Inmate Catering
INMATE CATERING
On a daily basis the prison kitchen feeds around 350 prisoners at a weekly cost of £16.39 per inmate. The kitchen provides a multi choice menu to all inmates which runs over a three week cycle. Inmates pre-select from a menu offering 3 lunchtime and 4 teatime options. The menus also provide low fat and vegetarian options. Special dietary requirements are also catered for.
Breakfast usually comprises cereal and toast with a cooked breakfast available on Sundays. Once a week the kitchen also supplies inmates with a pack containing tea bags, sugar, a packet of biscuits, a tub of marmalade and jam and small carton of Flora.
The kitchen complies with stringent hygienic conditions and strict temperature controls. The kitchen was also awarded ISO 9001 - a prestigious quality management award. All products are registered to the kitchen on arrival through every stage in the cooking process until the point of delivery to the residential serveries.
The inmate catering team is made up of 19 staff including porters and cooks and is headed by a principal officer cook.
There is an active staff training programme with all staff receiving training in Basic Food Hygiene with most of the cooks attained Intermediate or Advanced certification.
There is also the opportunity for inmates to undertake NVQ Level 1 and 2 training in Food Preparation.
